Our Doria Wines team is led by brother-sister duo Marco and Cristina Doria with the goal of importing great wines to America 🇺🇸. What exactly does a “great wine” mean? Well, there is no definition, per se, but click the below on our website to learn more about how we choose our producers.
Our Website (https://sandbox4.foxtrotdev.com)

As an importing business, unfortunately you cannot buy these great wines directly from us, but hey, that's why we have 30+ retailers/restaurants in the Maryland/DC area for you to purchase from, in addition to our growing number of distributors selling our wines nationwide.🥂 If you ever see/hear us talking about a wine, feel free to ask us where you can buy it! We have a network of friends/family helping on our team; a perfect example of the small-business ideal sought out in our producers. This newsletter is just one example of the ways we hope to expand our business in 2025, so get your wine glasses out, prepare some snacks, and join us in bringing a breath of fresh air from Italy to the USA in the form of wine.

** Vino 101: Understanding Sulfites
------------------------------------------------------------

Sulfites are most likely not the cause of your wine headaches (maybe it was having the whole bottle!🤦) In the simplest form, sulfites are antioxidants: they help with preservation. They occur naturally in some foods but are more commonly used as a preservative in products such as dried fruit, canned soups, shellfish, frozen potatoes, Dijon mustard, and others. In wine, they are used for the same idea: to preserve and protect the wine. They are an important part of the wine-making process and occur naturally during the fermentation.

Should you be worried about sulfites? No. Unless, of course, you are allergic/sensitive to sulfites. This is a rare condition, but still, something to be aware of. Commonly, people fear sulfites thinking they “give headaches” or they are “unnatural” and “harmful,” but they provide no harm and only work to preserve the wine for our enjoyment. FDA's food labeling regulations require that sulfites be listed when their content is above a certain threshold; however, wine labeling is regulated by a different government agency which requires the “contains sulfites” the statement that is commonly found on all wine bottles. This message, though, is not one to be feared.

We hope this helps clear some of stigma around sulfites in wine and ultimately, helps you enjoy your wine even more!

** Argomento della Settimana: Rosé
------------------------------------------------------------

Today, on the week of Valentine’s Day, we wanted to focus on talking about pink wine, or more formally, rosé. While most people associate rosé with France and their pale Provence wines😔, Italian rosés stand out with their distinct qualities. They are very different (and in our opinion better) because they can be enjoyed year-round, typically have a larger body, and can pair with both light and hearty meals. Versatile, and of course, pink🩷, Italian rosés offer a unique experience worth discovering.

Italian rosé can be made in three different ways:
1. White Vinification – Red grapes are harvested early, gently pressed, and the must (fancy word for juice) is quickly separated from the skins, resulting in a pale, delicate-colored rosé. Think… light, transparent, easy drinking rosé.
2. Red Vinification– Red grapes are crushed and left to soak in their skins briefly before the juice is separated and fermented. Think… darker, more structured, rosé.
1. Saignée 🩸(French for "to bleed” / salasso in Italian) – a technique where only a portion of the juice is run off (or bled) to become rosé wine while the rest produces a concentrated red wine.
3. Blending – White and red wines are blended to achieve the desired color and balance, but in Italy this is ONLY for sparkling wines. Think…. sparkling rosé (duh).

If you learned nothing else, just remember, rosé is not just a summer wine - if you’re drinking Italian rosé. Plus, it makes a great compromise if you can’t decide on red or white (just make sure it is an Italian 😉).
